Each tea has its own story, influenced by the local geography, climate, tea making practices, and market demand. While Việt Nam isn't famous for it's oolong teas, the quality of some Vietnamese oolongs has increased significantly in recent years due to adopting plant cultivars, techniques and expertise from neighboring tea producing countries like Taiwan and China.
In this class, we’ll taste four distinct styles of oolong from different regions of Việt Nam, including a rare aged oolong from the 1990s—one of the oldest examples still available today. We’ll explore the origins of oolong tea, explore the various processing techniques that bring out its remarkable flavors, discuss how collaboration and influence continue to shape the oolong styles available today, and brewing techniques to best bring out the tea's flavor.
